For Father's Day, I picked out the Masterbuilt Vertical Propane Smoker. I have by dying to try it out ever since so I decided the first think I was going to put in was a Tri-Tip. I marinated it in some Stubb's Beef Marinade for almost 2 days. I also decided I wanted to put in some Italian Sausages that I had on hand as well. I mixed up a rub and coated the sausages. I used mesquite chunks for the smoke. I cooked them for 3 hours on the smoker at 225. They came out pretty tasty! The TriTip was nice and moist and the Italian Sausages had a nice kick to them from the rub. All in all not a bad first run... ribs are next! =)

I used the original chip holder.. how do i use your method? Take off the chip holder on the bottom and replace it with the can?
 
Exactly. I have a GOSM very similar to yours. I use a coffee can and sacrifice the bottom rack space using it for the water/drip pan as the can is a wee bit high. The slotted original holder top sits just fine on top of the can. You can layer different woods too, and as I said, use smaller chunks or a mix of chunks and chips. Using a juice can, just lean it over where the original holder would go, cover the top with foil and punch a few holes in it like a giant foil bomb. This saves you from having to replace the chips so often.
