It isn't cooked yet, but for July 4 I wanted to make a bunch of stuff. I got a bunch of jalapenos for ABTs, 6 racks of babys, 2 butts (for a friend), a few pounds of Parm&Parsely italian sausage, some cheese, some crimini mushrooms (baby bella), sweet onions, cream cheese, 4 pounds of bacon, 2 pounds of ground beef (MOINKS), and some random other stuff.

A friend wanted to try to smoke some butts with his "uncles method" so he asked to use the smoker. He's got one butt in some italian dressing and another in a raspberry vinegrette.

On to the pics...

There's cheese in there, but I must not have taken a pic. The fatty will go on tomorrow with the rest of the stuff...

Oh yes, there will be more fatties in my future. This is fantastic. More fillings next time. Most of the cheese blew out the ends so I'm going to have to work on that.

Very nice. I'm thinking sliced about 1/4", served on ice crusty italian bread, and topped with tomato/basil/garlic/EVOO ala bruschetta style. Maybe a alfredo? Hell, straight slices are YUMMY.

looks good..how was it ?

I was suprised that I liked it as much as I did. I really tried to pick stuff that would normally go together. Parmasean & Parsely Italian Sausage goes well with Onions and Mushrooms. I wasn't so sure how the bacon or the smoke would go with it. I'm finicky about the amount of smoke I like.

You did good, Yummy, Yummy. Also good for breakfast over muffin and poached egg on top!

I'll be trying that in the morning. I'll let you know how it goes. :)
