• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Helped a bud out yesterday for a party he was throwing for his wife. he told me beforehand if I had any thing to throw on smoker to bring it over. I had bout some maple JD sausage like you guys said a while back but had'nt tried it yetso i took it over. Mannnnn., were you guys ever right. I kinda felt bad for my friend he dried his brisket out pretty bad and people would come by where we were slicing and sampling telling oh, its not that bad. Then they would take a bite of the fattie and just go nuts!! They all said my god what is that it is so good, told them just jimmy dean thrown on the smoker, They couldnt believe it

Congrats! Now you'll never look at breakfast sausage the same way again! Try cooking some fresh biscuits (on a WSM) and then adding a couple of fatty slices and a slice of cheese... Breakfast of champions!
 
Way to go, Elvis! Sounds like you need to get your buddy logged on to the Brethren site to get an education!
 
Another fatty convert. Welcome to the best, easiest cooking thing in your smoker. Now teach your friend how to foil that brisket and moniter the temps and use the cooler, and you wil be a hero with him too.

He tried so hard, but had IMO everything against him. He borrowd a large cooker on wheels he wasnt used to using and had a large crowd. Just wasnt the perfect set up.

I have been waiting to try a fatty in chili. usually when I fix them they are gone in 60 seconds. But this time I made and estra and quickly tucked it on the frig middle shelf behind the beef noodle soup from last June. Nobody would ever look there. then tonight I whipped up some homemade chili and added the fatty..................HOLY CRAP! Was it ever good.

Next burn, get a few lbs of sausage made from a butcher. Put a pound and a half or so in a bowl and add your own maple syrup, hot pepper, or what ever.

Night and day compared to the mass produced logs.

Ah, the aroma and taste of smoke throughout the famed fatty. personally, i prefer the sage sausage, lightly dusted with a well-heated (read cayenne-laced) rub, tossed on the smoker. The next thing to try is to completely wrap the fatty in thin slices of well-seasoned ham. Did that one for the first time last week just for giggles. mmm mm. did it again, on sunday. just make sure the seasoning is on the inside of the ham. i suppose you could dip the ham in maple syrup first and then wrap and cook that fatty, too.

bottom line is eatin' fatties is one step closer to heaven.
