• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Well, this is my second thread of the night. I hope you guys don't mind. :wink:
I put together my first fatty, yesterday, using two 1lb chubs of Jimmy Dean, some scrambled eggs, shredded sharp cheddar cheese, and wrapped it all up with bacon. Also, I threw the leftover trimmings from my last smoke (5 racks of spare ribs) on the Wrangler.

I have to admit that at more than one point in the cook, I said "I have no idea what I'm doing." I had a thermometer on each end of the smoker, and my temps would spike on one end, then drop and spike on the other end. I had to watch over it like a newborn baby.

But, once I took everything off the smoker after 2 1/2 hours, I caught myself bragging to my wife about the smoke ring on the fatty, saying, "You see that? That's how you do it." :lol:

As always, the picture quality does not convey how awesome the food turned out.

I think that looks awesome! I like the idea of eggs in the fatty.
 
Bacon, eggs, sausage, okra --- seems like a well balanced breakfast to me :-D.

Thanks, guys. The fatty was not difficult to put together and the result was well worth the effort. I'll be doing it again, but I'd like to try some different stuffings.
 
Great looking fatty, bacon and rib trimmings. That is a full size breakfast meal. Nicely done.
