• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Finally amassed enough cured meats for a decent charcuterie board. The spread included all homemade cured lonzino, coppa, guanciale, head cheese, smoked cheddar, maru's pickles, some homemade jam and whole grain and digon mustard. Need to learn do do some salumi now but this was a good introduction! Everyone enjoyed it.

That looks great! Salumi isn't much harder, really. I don't think you'll have a problem :wink:
 
Thanks all! Was definitely happy with the results and cured meats go a lonnnnnnnnnnnnngggg way. I only cut up about 1.25" of meat per chunk and it easily fed 4. Was missing the salumis tho which is my favorite. Might have to tap FB joe/shagdog/ssv3 shoulder on some tips. :thumb:

Also the wifey did the plating/pics on this while I was cleaning up the slicer.
 
AWESOME job man.....really good looking food....

The worst part about charcuterie is the farking waiting for the meat to cure....
