• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Here's some pics of my Christmas cook today... I'm tired !!!!

13 lb. prime rib cooked with Poobah's recipe (added some Worstershire sauce this time too), lasagna,stuffed mushrooms, fried cauliflower, stuffing with chopped fattie, Proscuitto Di Parma/sopressata, fontina & mozzarella appetizer platter, shrimp cocktail, broccoli w/ garlic,lemon & oil Pumpkin Cheesecake from Cheesecake Factory...

Everything was great. Prime Rib got a little overdone but still came out excellent. Took it to 130 and coolered but it sat in the cooler longer than I expected as the guests arrived later than we planned.

Looks pretty good!!!! You guys need to live closer so I can drop in for dinner!!!
 
..... OMG !!! what a feast !! Everything looks awesome! ... What's that (red) after the lasagna? I bet the 'prime' tasted dang good even with the eztra time.

I'm impressed.

The red stuff is Proscuitto Di Parma... Basically Italian ham that is air cured for 12-24 months. You can get regular domestic proscuitto, but Proscuitto Di Parma can cost in the neighborhood of $18-22/lb depending where you buy it. It is produced in a certain region of Italy and under strict guidelines to qualify. I belive it has to do with the type of whey that is required to be part of the pig's diet.
 
Looks great vinny! Doc told me to cut down on the Diparma, says i wont make 40, i think he said the same thing before i turned 30

I am not Italian, but your spread looks, and I am sure tastes, absolutely wonderful. Merry Christmas Buddy.
 
That's a fine looking feast Vinny. Just like here at home..., no one leaves hungry. :-D

Great looking spread. You must have had a bunch of smiling faces at your table.

Your totally correct that Prosciutto di Parma is only produced in a small part of Italy and it must meet very high standards.
In addition, the Pig will eat excess whey from the production of the king of cheeses, Parmigiano Reggiano.

Mybe next year I'll have to stop by for a taste test.:-D

I can't wait to see what you will come up with for New Years dinner.
