• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

My adventure continues this Saturday are I try my hand at a Brisket. I have a flat I want to practice on. Any tips.
 
It's going to be mentioned a thousand times, so here is number one, cook until it is probe tender and let it rest a while before you slice it, across the grain. I prefer to wrap in butcher paper, but for a flat, you should be able to use a large paper bag (I have). Be sure to post some pics.
 
Doing a small flat on the 2* today. Weight is 4 1/4 lbs. how long will it take?

First off the 6 oz burgers were on for 2 hours and oh my they are tasty. The Brisket cooked for 9 hours and I think it is delicious.

Worth the wait, that looks very good
 
Sliced some Brisket for lunch and put some MAK honey stinger on it and wow! That's delicious!!!
