Last week, when I was looking for something in the big freezer, I discovered a package I had forgotten about. Last year, during the Dutch forum´s spring bash, I smoked a bone-in pork belly that for Phubar and team, it came from their meat sponsor. They gave me 2 big slices to take home afterwards. So that´s what I found in the freezer. I fancied some pasta so I MSU´ed a pasta sauce with the pork.

Dice up the pork and sauteed it to render some of the fat.
Took the pork out of the pot, added onion and garlic.
Then deglaced the pot with some red wine.
Added salt/pepper/dried thyme/dried basil/dried oregano.
Added passata and some diced tomatoes.
Let that simmer for about an hour and then added back the pork.
Let it simmer for about 30mins.
Right before serving, I added some water from the boiling pasta.

Came out REALLY good.
