I made two batches of pepper jelly last night and tried out my new $2.00 thrift shop juicer -- man it WORKS!!
Did batch of jalapeno. Split the batch and colored half red and half green and then put half/half in the jars -- very festive!! Mild to medium heat (depends on whether you have taste buds! My wife tasted and didn't run for the milk and she has a fairly low tolerance
Did a batch of habanero -- whoo buddy!! While not as not as hot as Dave's Insanity sauce, it is pretty spicy for a jelly. I found some really nice, about half-dollar size habs with really good red color. Juiced out a solid 1/4 cup of juice and used that with some really good bell pepper juice to make the base for the jelly.
Tasted a bit before knocking off for the night (I'm doing low-carb/low-sugar right now so can't give any of this a really try
) and it was pretty hot -- probably medium to hot again depending on your taste. It is hotter than my last 10-hab batch -- better peppers and more juice (probably 15-18 habs and witht he juicer and just stem the peppers and shove 'em in the machine -- so there is some heat coming through from the membrane and possible seeds - but no seeds in the juice.
Anyway, I'll be sending some out for taste trials.
