• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

More Brown Sugar in the Rub?

Here is my favorite butt rub recipe. I tried increasing the brown sugar to 8 tablespoons because I have heard that more brown sugar helps form a crust on the meat and seal it up to preserve juices. It is still spicy, but a lot sweeter. It was great on fatties yesterday. Is this a good idea? What is the favored amount of brown sugar?

· 2 tablespoons salt
· 2 tablespoons sugar
· 2 tablespoons brown sugar
· 2 tablespoons ground cumin
· 2 tablespoons chili powder
· 2 tablespoons freshly ground black pepper
· 1 tablespoon cayenne pepper
· 1 tablespoon onion powder
· 1 tablespoon garlic powder
· 1/4 cup paprika (4 tablespoons)


 
That's the same rub I use with a couple of small tweaks. Upping the sugar I think was one of them as well as cutting down on the cayenne and paprika. That much cayenne just made it too spicy for me and there's so much bulk from the paprika it seemed to cake up on the meat and not cook out that well.
