Finally had a chance to finish up the 72 lb case I bought. Been liking the wet brine that's what I did these in. Adjusted it a little bit. Added a good coat of black pepper. Hung three of them in the Slinger direct fire cooker with the heat deflector put in. Run it 200 The other one I hung in the drevos electric smoker run at same temperature. The top two And the bottom right one came off. The Slinger bottom left came off the drevos. Other three are definitely darker richer looking. I'll have to see when I get them. Sliced like cooking over wood though
