• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I recently re did my baffle. As I mentioned before, I made my original baffle out of alum flashing material before I seen pictures of the one`s filed here. And, because I not knowingly was using the water pan brackets upside-down on the lowest shelf, it held the water pan up an additional few inches. The extra height in the water pan allowed me to extend my baffle farther into the smoker. I`m into the smoker 7 inches. The height of the baffle is 5 inches (the height from the top of the fire box opening to the bottom of the smoker). I had great results with it, keeping the temps the same from the thermometer in the door to the one in the middle of the smoker. This new one I did was the same dimensions as last but I found a nice, thick piece of copper to make it out of. Now I have the water pan brackets rightside-up but at the second shelf, giving the same height of the water pan. A radius was cut for the bottom of the water pan.

Greg, .................. This design is identical to my first baffle made from alum flashing. I only changed it because the thin alum is too flimsy. The copper I found is pretty heavy, bent easy and easy to work with. When I first joined here I understood what needed to be done (get the smoke/heat to the center and far end of the smoker), so I thought of building something to get to the center of the smoker. The higher water pan allowed this. This was before I seen the pictures of other`s baffle`s here.

I have only a slight consern. I hope the copper will withstand up to the heat well? I would think it would? If it don`t, I`ll be redoing it again with something else.

Was thinking about something driving around this morning for work. Using the recommended baffle design here, does the water in the waterpan boil at all during cooking?

Mine does when the temp in the chamber is at or above boiling point.
 
Mine does on the vent side, primarily.

Sometimes if temp chamber gets a little high, a handfull of ice cubes and a little cold water in the pan will ease things down a bit.
 
When I get temps too hot, the water pan and cold water/ice are my best friends. By the same token if my coal bed is a bit low and its time to foil or rotate or what ever, if the water pan is low at all I'll take the opportunity to add hot to boiling water too.
 
Dont know why you would want to cool down your water..(Ice cubes?).. mines usually boiling and i like that... keeps the chamber humid. I always add boiling water from a teapot if i need to add any.. but why do you ladies like to cool down the water pan???
 
Phil, I just use it (ice or cold water) to eat up excess btu's if my temps start to run up on me. Haven't had to do this in a while, but first few cooks was a good fix for poor fire control.
