I smoked three slabs of bacon this past weekend. My freezer is now well stocked. One slab was for me (no sharing with my wife), that is the ghost pepper bacon. I use local Berkshire hog belly. The tough part about slicing it up was having to fry up and eat the "scraps". :grin: Here's a shot of a couple slabs before they went into the refrigerator to cool before slicing.
