• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Mixon H20 Smoker thoughts?

I would like to know what everyone thinks of the mixon water smokers. I looked at a MMS 60 yesterday. Very well built unit with a fair amount of cooking space. I have questions about the water pan though. Does the water pan need to be used all the time? In this unit the pan separates the cook chamber from the firebox below. If the pan were left dry, it would collect drippings from the cook which would end up smoldering on the dry pan (so I would think). The pan is not tilted toward the drain since it was built to hold a level amount of water from side to side. Can anyone tell me about these cookers?
 
It's my understanding when I was looking at them that the pan needs to be filled with water otherwise the grease will catch fire. You need to have a good water supply or manually fill it. Excellent cookers though.

If that's the case, I wonder how much water would need to be added every hour. Although it has the potable water connection with a float for control, that wouldnt work well for winter time cooks. The water would have to be added manually.

This cooker was listed on Craigslist and was close to me. I am in the market for something with that amount of cooking space or maybe even larger but I didnt know anything about the "water pan smoker".

As far as quality though...this thing is very well built with some great features!

I'll have to do some thinking...

The rate of water usage depends on temp. If you bought one of those RV hoses that's heat traced, that would solve your winter cook issues. There are alot of guys on here that have them that should be able to answers your questions or call the factory direct.
