• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Mistakes, I've made a few..

...ok, more than a few.

So, sorry I had to leave prior to the Giants game, but I had a great time at Willie B's. Would have been much better if the Jets had won. Damn New England!

Anyway, I made a couple of mistakes that are easily corrected while there.

1) I had made japs wrapped in bacon and filled with cheese (are those called abt's?). The bacon takes MUCH longer than the jap and the cheese. Next time: use the precooked bacon or fry up the bacon a bit and then wrap the jalapeno.

2) For those that are not into heat, I stuffed cream cheese in a cubanelle, topped with pulled pork and then threw it in the lang for about 40 minutes. Problem: The tastes didn't gell at all. Next time: mix the cream cheese with the pork and then place in the pepper. Layered = not good.

and a bonus mistake:

3) Left the ribs too close to the heating box. Oh well. I'm learning.

Success? I made the first rub that I was happy with. Not satisfied yet, still gonna tinker, but I was happy with it. Sorta citrusy.

On the ABTs mix the ingredients and add a little rub to flavor the cream cheese. And I use cheap thin bacon. I cut the fat end off and use the centers.

TY has it nailed!
ULTRA THIN SLICED bacon cooks perfectly.

You are right if you use any thing with body or thickness to it.

Eric - the ribs were great (I like them dry as well as moist) and the ABTs just needed more time and heat. I put them in near the heat side for an hour or two. They we great after you left!

I buy the CornKing brand when it is on sale for $1 a pack. Buy about 20 packs and put it in the freezer. Thin is in!
 
If you can't find the thin bacon, you can partially cook regular bacon in the microwave too. The partial cook works great for something like bacon wrapped scallops or shrimp when you absolutely, positively don't want the centers to overcook waiting for bacon to get done.

Ditto! I buy about 5 packs, cut them in half and vacu-seal.
