Cooking the bird upside down will keep the breast meat from drying out. :wink:
Do you have to cook it whole for presentation's sake? Otherwise, cut it up into leg quarters and split the breast like a spatchcock chicken.
I have weber kettle lids on mine and a 12-14lb turkey fits easy. My top grate is 3 inches below the top lip of the drum, just like on the weber kettle so anything that fits the weber will fit my UDS. Works great!!Get a Weber kettle lid for the drum or a free sample of Enzyte.
