• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Is there another name for Tri-Tips and if not is there a Roast that is the same cut.
Do we have on the site anywhere, Names of all the cuts that are used most for low and slow?

In other words, Can someone kind of go Alton Brown on a Cow for us.

Tritip is sometimes sold as a triangle roast, or sirloin tip roast.

That is a good question and The North American Meat Producers have taken some of the leg work out of it for the consumer by not only naming cuts but giving them a number. A good butcher will have a cross reference chart with the numbers.


Other names for tri-tip are: bottom sirloin butt, corner cut, knuckle cap, Santa Maria sirloin, triangle cut, triangle tip or punta en triangulo.

The whole tri-tip is a NAMP 185C and a trimmed (defatted) tri-tip is a NAMP 185D

Speaking of Alton, I think this might be one of his charts.
