• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

May have a new Christmas meal plan.

I was in the mood for some fried chicken last night but had no butter milk which is what I use most times. I did not want to run to the store, what with gas prices and an ice storm.

Well I happen to have some eggnog so what the heck in it went. Well we were pleasantly surprised when it was all said and done. It was darn good with just a slight sweet taste but not over powering at all

Since you can only get eggnog around the holidays, unless you make it from scratch, this may be my new signature holiday meal. I served it up this scalloped potatoes with small chunks of ham and some diced green onions added, and a side of frozen peas and carrots.

Now just to keep it bbq the day before I made some homemade vegetable noodle soup with leftover brisket and pork butt smoked of course, also darn tasty. Made cheesy biscuit's to go with.

Merry Christmas one and all.

Wow - talk about using what you have on hand! Thanks for sharing.

Next time you find yourself out of buttermilk, take 1 cup of milk and add 1Tbls of vinegar. Place in warm place, 5-10 minutes later you have buttermilk. I do this all the time since I rarely use buttermilk.

That's pretty interesting. Do you have to use whole milk? Would it work even better with half & half?

I've never tried half & half. All we use around here is 2%, but I would imagine it work just as well if not better with whole.

I will have to give that a try. I love butter milk but only buy it when I am going to deep fry something. Are you using white or cider vinegar?

I keep a bottle of lemon juice just for making buttermilk. Same ratio just different acid.
