• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Well I finally got home around 4 P.M. Made nice with Momma and passed out for 10 hours. Whole thing went off very well with great reviews.

Served 425 Marines and families and I feel like I ran a marathon today.

Food totals:

9 Briskets (12-15 lbs)
16 Butts (6-8.5 lbs)
224 Hot Dogs
110 lbs tater salad
5 lg shafing dishes of two meat baked beans
200 bags of chips
312 Hamburger buns
240 Hot dog buns

Lessons learned:

I wasnt prepared for all the grease/juices produced from all that meat. I need more 5 gal buckets with lids.

I cant cook, load pans, run the serving line and panic with just me and two people. Luckily, 3 of my Marine buddies jumped in and saved my arse :roll:

There are never ever enough cooking/serving utensils

Clean up sucks...

Well I was doing good til almost serving time. Pulled my first pan of butts out to pull and they wasnt ready to cooperate :shock: After I ran around the parking lot with my hair on fire I opened another pan and it was fine. Had two pans out of eight that wouldnt pull. Ended up chopping them and mixing in with the good stuff (bbq mask mod)

Brisket was great but again two didnt want to pull like I wanted and they were sliced and came out nice. Made for a good mix but wasnt expected.

No leftovers but I could have easily had more beans and hot dogs. At the end I took all my good scraps of brisket and butt and mixed them all together and sauced the whole thing (lg pan). Put it back on the cooker for awhile and threw it back on the table...gone in no time. :-D

All in all it was fun, exciting, tiring, boring at times, panic stricken, crazy and MORE FUN. Very satisfying and the Marines and families were all very appreciative. Word got out that Momma stayed up all night making the tater salad and alot of people tracked her down to say thanks.

Way to go man, that's a long day.

Having helpers makes all the difference. I've been accepting that I don't have to do it all myself-- makes a big difference.....

It was quite an experience for sure. And I lost 10 lbs!!

Probably get that back today...watching the Charger pre-season game :biggrin:

Keep drinking more liquids today, (water, not beer!):-P

That was a fine thing you did. I am sure the marines appreciated what you did, and went thru in their honor.

Don't worry you did not lose tht 10 pounds it magically got transferred onto me, I am at work and have not stopped eating for two days now. I am even sick of the thought of food, until I go home and have to plan dinner.
