• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I wasn't planning a real cook today, but I was just at the local mexican supermarket and saw these beautiful peppers:

Just beautiful colors, don't you think? Perfect for another batch of my Jalabellanero Wake-Up Dust.

2lb Red Sweet Bell Peppers - a round sweetness
2lb Green Jalapeños - green chile flavor
0.5lb Habaneros - fruity flavor and heat

It's all taking a long sleep in cherry/oak smoke until dry. Then I'll crush in a blender and sift the final powder.

So are you actually going to dehydrate and create a dust? I do that with bell peppers.

Temp in the smoker is probably about 275-300...that's where my cooker likes to be. I'll smoke until completely dry. Then crush into a powder using a blender. Then I'll sift out the bigger bits of skin/seeds that don't get pulverized as easily. The leftover fine powder is like gold...rich reddish brown in color, deeply smoky and fruity smelling, sweet flavored when it hits the tongue but finishing with a gradually peaking heat. Easy to make...try it! You'll end up using it on everything like me!

I love ground, dried hot pepper for all sorts of stuff. Hadn't seen the smoked version, but can only imagine how tasty it is.

Here's what happened to all the beautiful colors...all smoked and dried out. The habaneros sound like ping pong balls. All the peppers look kinda black from the smoke, but inside there's still some retained color. And of course, the flavor is still there and super concentrated.

Next, let them cool off a bit and then into the blender for a whirl!
 
Keep posting progress pics very interesting never though about it before how much rub do u have after entire process?
