• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Mac and Cheese Recipe

As a couple brothers requested:

Macaroni and Cheese
Ingredients:
1 pound elbow macaroni
5 cups of milk
10 tablespoons of butter
10 tablespoons of flour
4 cups shredded cheddar cheese
ground pepper, salt, paprika, grated parmesan cheese

1. Butter a large baking dish and preheat oven to 400
degrees.
2. Cook the pasta and drain in colander.
3. Warm the milk on stove.
4. In the pot you used to cook the pasta, melt the
butter. When it foams, add the flour and wisk
immediately. Wisk constantly for 2 minutes.
5. Slowly add the milk and keep wisking over
medium-high heat. The white sauce will thicken. When
it boils, shut heat off right away (big sputtering
bubbles).
6. Stir in the cheddar cheese. Add pepper and salt to
taste.
7. Pour the macaroni from the colander into the cheese
mixture. Mix well. Now pour the whole thing into the
buttered baking dish. Sprinkle the top with parmesan
cheese. Then sprinkle with paprika.
8. Bake uncovered for 30 minutes or until lightly
browned on top.

Probably but how much food do want have smoke flavor in? The way I figure, the BBs and brisket or whatever meat you're cooking has the sweet smoke taste, and so do the beans if you do those in the smoker, so the mac n cheese is perfect the way it is (IMO). LIke I said - perfect complement for q.

That's actually why I've wanted a good mac n cheese recipe. I think it's a perfect match with all the other great smoked flavors. Thanks, I'm deffinately gonna give it a try.

Add some chunks of crispy bacon and crushed potato chips (very fine) and brown the top if you can. Yuppers, I said potato chips! Give it a whirl, you will be surprised how well it works out!

That's almost the same as my wife's recipe; she adds some parmesan at the end.

Kick it up a notch. Add a little chicken or beef bullion. yums.
 
I do the same recipe only I saute some finely chopped onion in the butter and use heavy cream instead of milk
 
Ok, I was looking for a "simple" mac and cheese recipe, and this one seems to fit the bill. Any reason I couldn't or shouldn't use my DO for this one? I'm going to cook it in the oven, not the smoker.

I know this is an old post, but a bump never hurt any post.

I don't know but onions do not belong in Mac & Cheese or Cole Slaw, had both this weekend in Daytona and asked the chef at both places why? My Mother ..... at both places! just sayin'

we always put mac and cheese in the uds for an hour or so, ridiculous how good it is.

gonna try this recipe and put it in the smoker.
 
Started smoking my Mac and cheese the last few times with rave reviews. Once the top sets up not too much smoke gets in. What you get is this great chewy layer of cheesy smokey goodness on top.


Btw I just read today that to get the creamyness factor up you can cook the pasta in the milk. The remove the pasta and continue with the recipe. Gonna give that a try next time.
