• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Looks like a long night.

Its 6:00 PM, I now have two 20 lb turkeys in the Bandera. The hickory wood is in the red ember state. I bought some fire place bricks and placed them in the smoke chamber and in the fire box yesterday. That seems to have stabilized the temperature everywhere.

It’s going to be a long night…

yes grasshopper.. Find a spray bottle fill it with applejuice, and a tablespoon or 2 of olive oil. Keep that baby sprayed down. Hope ya got a remote temp gauge so you can get some sleep.
 
Its 4:00 AM and no sleep. The birds are a rich deep brown with an internal temperature of 150 F. A few more hours I think.
 
A True Brethren!!!! Your eyes are red, your wandering around scratchin your a$$, up every 45mins to an hour to stoke the flames... .. when u finally do hit the bed, you smell like smoke and leave a soot print on the pillow.

Unfortunately, the flames I had to stoke were on the farking stove where I left a pan of butter I was melting. Came in to billowing smoke... and the butter ignited just as I was walked back into the kitchen.

...at least the turkey was unharmed. :shock:

The turkeys were done by 6:30 AM and turned out great! I can't believe the difference the fire brick made. Thank you for the suggestions brethren!
