• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

ok....it's brisket II "no holds barred"

the fam asked me to try a diff wood besides mesquite this time, so i grabbed some hickory. last time i sprayed with apple juice, but thought something different might be fun.

any suggestions?
 
I like to use a combination of hickory and pecan. I dont bother spraying briskets.

Try cooking a pork butt above the brisket and have it basting the brisket with pork fat drippings.
 
Why not try spraying it down once an hour with a nice Samischlaus?
 
If you want to try to change flavor with a spray--try adding some booze to the AJ.
Back when I sprayed, I added Southern Comfort. In sufficient quantities, you can taste it. Others like JD or other whiskey/bourbon flavors.

Or, add cherry/strawberry/peach/mango/"whatever" juice for a different approach.

Now, I change flavor with the injection and the rub and do not spray.
Just me though.

Have fun experimenting.

Not sure what you mean by "limit".
Spraying adds surface moisture during the cook.
Strong flavors in the spray will (or may) add surface flavor to the meat.

I don't have a clue as to how it would affect bark in terms of "limiting" though.

I don't spray brisket either. On por you might try an orange flavored liqueur like a Grand Marnier knock off. Don't use the good stuff.
 
I spray the chit out of everything.

I use cherry flavored juice (kids juice box stuff, not cheery juice).

Best combination is cherry wood and cherry spray.

It helps bark, because of sugar content.

Brisket I use AJ and a little bit of JD.


60/40 cherry and peach nectar on wibs/pork.

Peach or pineapple on chicken.
 
I don't spray brisket, either. i do like the basting effect of a butt over the brisket (BOB).

For wood, try oak and pecan.
 
I don't mop or spray anymore, but I used to like using coffee, sugar, butter and some rub mixed in.
 
Spray = AJ, Whiskey, and a little bit of vinegar (pickle juice). Family likes the flavor, so it must be good.

Do not spray until after the bark has set-up. A rule-of-thumb I use is to start spraying half way thru the projected cook time. I like apple or apple cranberry.

I spray everything; sort of like marking my territory.

This weekend I did my first brisket ever without spraying and only lifted the lid twice during the entire cook. I was pleasantly surprised. The spraying does enhance flavor to the finished juices and makes the neighbors go wild.

Dill Pickle Juice is nice, and if you want to get fancy use dill pickle juice, Tabasco, and red wine in equal portions with a little of your favorite rub added. Mop it if you add rub so the spices do not clog the sprayer.
 
Lemme let ya all in on a lil secret. Where I help do abt 600 half chickens, 25 per rack over a charcoal pit. They basted, well usta baste it w/approximately 4 gallons of vegetable oil...... No chit..... Bad nuff we had fat running outta the birds into the fire. But when we basted w/veggie oil...OMG..... lotsa fire. Bugged em for 2 yrs to lemme baste it w/AppleJuice. They thought I was nuts for sure. Well they told me to bring my A/J and spayer. Now they demand I do it w/my blend instead of straight oil...... Meat comes out darker, or more pretty as I say.
And Im not moving 10 racks of chicken as much due to the huge pit fires...LOL...
Well ya was lookin for a new idea................................
