• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I was at Costco the other day and saw that they had prime brisket for $2.79 a pound and thought "why not". What I didn't think about at the time was how I was going to fit it into my 30" MES.:biggrin1:

I have seen where people have cut them in half, and I have seen where people folded them over to get them to fit. What is the best method for smoking an oversized brisket? If I cut it in half, do I check the temp in one half or both? Do I need to do anything differently, or should I just stick to the usual cooking methods?

Any advice would be greatly appreciated. I plan to smoke it so it will be ready for Saturday evening. I figured it would be good to come up with a plan in advance so I will be ready to go.

i have used an empty beer can under mine to make them fit, once they start to shrink you can pull it out
 
Haven't had to arch one, but I did have one I had to put a foil shield under to protect it from direct heat.
 
I personally like cutting mine to fit. I always cut the thinnest part of the flat and cook it on the side for a snack. It doesn't harm the brisket and gives you a "Taste" early in the cook.

Or drape it over a bowl.
