Babbling Farker
Pizza making runs in my families blood. My grandparents owned and operated many, restraunt, deli and pizza place.
For pizza I can put together the sauce (a guarded secret:-D ) and the toppings, but man I'm telling you I stuggle with that dough.

My 94 year old grandma does the "pinch of this and a pinch of that" stuff with the dough which just frustrates me, and I'm trying to pry the dough perportions out of my uncles..
Anyway, until I nail it down, I wonder in the desert. Here lies the tale;
Lame try on the peal... This baby, even after I layed out a good layer of corn meal, sat on that stupid peal and gave me grief, it laughed at me as cheese and what not dripped on my stone (at 500*}.

Lame looking, but very tastey pizza. Notice higher rize parimeter.

Note; the first two pics were without using a rolling pin. You get a airy, different consistancy without the pin. I don't have a real clue as to how to produce a round even base by hand. So, this last pic is rolled with a pin. I got a nice looking pizza but the dough was different, compressed but a bit more chewy. With both pizza's the dough base was firm enough to support the sauce and toppings.
