I'm home with a sick kid and found Tyler Florence cooking a parted out pig on one of these things on FoodTV. Now I want one (I'm sure the wife will be pleased). Looks like a great way for me to cook a whole hog without a large pit. Only disadvantage I can see is no smoke. Anybody have any opinions on this or have one at home? Thanks.

You don't have to have smoke to produce great food!!

This thing cooks more in the Cuban style - also similar to kaluah pig from Hawaii. It is a great way to cook pig - moist, tender, delicious - but not traditional bbq.

You'll taste the influence of your marinades, injections, rubs, etc. far more than you will with bbq.

They're great! I don't own one, but I've seen them used and they deliver on their claims. They cook quick and efficiently. I know people do a combination of smoking on their pit and finishing in the LaCaja China which is a cool way to go, too.....

Would it be KCBS legal, say for the World Pork Expo?

Interesting question - probably so. It uses charcoal for cooking.

You'd be fighting an uphill battle with the judges with no smoke ring, etc.:-D Not that smoke ring is supposed to be considered. You'd better have great seasonings and a killer sauce!

This cooker also does a great job on chicken, turkey, etc.

I have seen pictures from those who have done it before, but I have no desire to cram a pig into my FE. I would love to have a JOS hog cooker but not for those dollars. I think this would give me the option of cooking a whole hog with minimal fuss and mess. I checked out the website and prices look decent although I don't have much to compare it too. Thanks for the responses.

neat deal, I seen one in action food is good but I was not impressed enough to buy one for myself.

You can't get much easier when it comes to cooking a pig. Clamp it into the rack, put it in the box, pour coals on the lid and let it go for 3 hrs or so. Flip it skin side up for the last hour to crisp the skin and there you go.

They are a lot of fun but haven't gotten to use it as much as I'd like. We've ordered a 50# pig for New Years Eve. You can also do any number of other meats but the pig is a good show.

I personally don't mind giving up the smoke. Just a different style than what you'd create in a smoker (but in much shorter amount of time).

What does one of these cost?

The photo makes me think it could be made without much of a problem.
Then again, sometime its just easier to buy and prevent any possible problem,

The advantage is if you screw it up, you just bury the pig in the cooker.

$289, though mine was a shocking birthday surprise from my wife this past June. Much easier than trying to build one.

I am certain anyone with some metal and wood skills could fabricate one. Especially if a kind brother who owned one took some measurements and pictures as a guild...

That would be amazing! All of us tri-state brethren should figure out a date and location and cook us up a lamb!
