• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Christmas is around the corner and I am looking to upgrade my knives. Any recommendations on knives that are must have. Looking for knives I would use to trim and slice meets. Thanks in advance for the help.
 
I'm looking for a smaller carving knife for chickens. Like a turkey carving knife but smaller. Cuts thru the crispy skin without tearing, and then nice smooth breast meat.

Maybe a smaller version of a brisket knife?
 
Also, look at a way to keep them sharp. It's one thing to have a good set of knives but they're no good if you don't keep up with them...

And by all means NEVER put them in the dishwasher lol

They are not pretty or expensive but I prefer the carbon steel Old Hickory knives, you can get a surgical sharp edge on them.

I raided Ebay for an entire set of Cutco's. Lifetime replacement warranty, great quality, and I didn't pay more than 40% of brand new price for ANY of them. You can send up to 45 items back at a time for a free factory sharpening, and for $9, they ship em back to you. So happy with them.
 
It's the sharpening that gets me. I have one really expensive knife and it almost never gets used because I hate taking the time to sharpen it. So, I bought some culinary student grade knives - from Update International - and one of those cheap pull through sharpeners. The blades hold an edge pretty well and they're cheap enough that I don't care about using the cheapo sharpener on them.

You really can't go wrong with good knives. We have started down the Shun path, and they are excellent knives.

Wustof are great as well.

I gotta say though, the Forshner knives that I use in the competition setup, that are great. Keep them sharp and they will go up against the best of them. Can't beat the pricing either.
 
Look up Forschner on Amazon. You can put that same kit together for probably $125, maybe $150. The brisket slicer is great, and their 6" boning knives are mostly what I use the most in comps or even at home for prepping meat. My knife set is really about 3-4 boning knives, 2 slicing knives, and a sharpener these days. The paring knives and chef's knives stay in the knife roll.
 
I recently started getting the Forschner knives from Amazon. I have a full block of Wusthof knives but now will only use the Forschner knives. Not expensive but work very well. The only thing I use from the Wusthof block is the sharpening steel. You can't beat these knives.

Doesn't matter what knives you use, please do yourself a favor and hand wash and dry them. While they may say dishwasher safe, you are far better off to not put them in the dishwasher. It does not take long to properly hand wash your knives and they will last much longer. Just my 20 cents (adjusted for inflation).
 
I have been buying victronix knives off Amazon. They are inexpensive and are really good. They are a cooks illustrated editor pick. I love them!
