• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

All my pork comes from BJ's as well as chicken. My briskets come from a butcher.
 
You should consider Bichelmeyer's. Talk to Matt and tell him you're a BBQer. He's been supplying cookoff teams for years.

I think that knowing someone is the key.

When you're selecting out of the meat case, you're spinning the wheel and who-knows-where it will land. Sure, you can make some large scale judgments based on what you see, but you can't know the WHOLE story.

When you know someone (I have a friend, Archie, in the meat department at my neighborhood Hy-Vee) they can keep an eye out for you. It helps if your buddy in the meat department smokes meats because then they will have a much better idea of what you are looking for in a cut of meat. But even if they don't, you can specify what you need and they can place an order for you with their supplier.

I also had great luck with my local butcher, but he had to go out of business because most people are buying their meat from large grocers instead of a local butcher. If you have a local butcher, I'd start there. Be sure to strike up a conversation so that they know exactly what it is you're trying to accomplish with your meat purchase.

I have bought the meats for our last 2 contest at Sam's. They were doing OK for us, but lately the briskets that I can get are very small, and I havent liked them.

I have been meaning to check out Restaurant Depot. I have heard from more than one team thats where they get thier meats.
It is raining today, might be a good excuse to take a ride.

We have been talking amongst our team about switching to organic only meats. I dont know if I am buying into the whole "organic" foods movement, but I would like to be able to partner with a local farm. Here in the Hudson Valley we have some of the best small farms and while I cant give any scientific evidence the food from the farm stand down the raod has always tasted better than the stuff you get from any store.
 
I second the Bichelmeyers suggestion. Best meat in town. Don't be afraid to ask or call ahead for anything.
 
I quit buying at the large stores. If I need a mass quantiity if ribs or brisket, my cousin orders it for me through Tyson. Otherwise my local grocery store has a great butcher shop and are happy to oblige any cut that I ask for.
