I didn't make the exact poboy in the second video below (the first video is super cool, so be sure to check it out), but I did borrow the lettuce/cabbage technique and I don't double dip on the egg wash either. The crawfish didn't go into the wash, although I probably will next time. I made a spicy mayo with Dukes and a couple different levels of heat (hot and extra hot) Lucky Dog hot sauces. Fried shrimp on one and crawfish on the other. It's hard to beat a poboy, even when the pictures aren't the best. The cocktail and tarter are just pickups and not for this meal.
