Started the 4th with my nextdoor neighbor doing baby backs on his new WSM (2nd cook). Smoked 4-1/2 hours with apple chunks and nothing but dry rub and Tennessee Red at the end. He nailed 'em, they were farkin delicious and easily pulled from the bone. The 3 racks didn't last very long at all once we got a taste.
Then I saw it! I could not believe my eyes...a pink thermopen! Yes! PINK! What should I do? Is there some sort of intervention or 12 step program or something? It could be his wifes pink thermopen right?? :becky:
After the ribs we put burgers on the Rib-O-Lator with pats of garlic butter in the centers. Made my version of the Famous Dave's Ultimate Burger with bacon, b&b pickles and pulled pork on top. Too big for my mouth (I have a big mouth) so I had to eat it with a fork.
Had a great 4th with good friends, good food and lots of fireworks! What more could you want.
