• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Is resting or cooking longer more advantageous?

Smoking a brisket, dinner is at 6:30. I would like to let it rest an hour but not sure if it'll probe tender in 30 min.

Would the end product benefit more from cooking longer and shorter rest or cooking less and resting longer?
 
It has to be done before you can rest it. Let it cook until it is probe tender, whenever that is. It still may take more than 30 minutes. This is why you dint quote a time when the meat will be done. You can quote a time to eat and then go back with your timeline to have your meat done well before that time.
