I'm working on building a stumps clone out of a stainless steel commercial refrigerator freezer I bought off of ebay. It has styrofoam insulation that I'm in the process of removing since its not good for higher temps. I knowI can use mineral or rockwool insulation, but i"m having trouble finding anywhere to buy it. Can I use a fiberglass insulation from home depot or lowes? Is there anything home depot or Lowes sells that would be good to insulate the inside of my cooking chamber?

No you can't use fiberglass / pink insulation. In Los Angeles I can get any kind of high temp insulation from a company that supplies the oil refineries. Construction supply for masonry or tilt up wall construction may be a source White-Cap is one such supplier here.
