• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Thinking of building an insult. vert. Can they run low enough temps to cold smoke like bacon and cheese??

You can cold smoke in pretty much any vertical smoker with a sawdust maze smoker or a pellet tube smoker...don't need a fire in the smoker at all this way, just get the maze or tube smoldering and place it in the bottom of the cabinet. They'll produce smoke for many hours without raising the temp in your smoker much.

I don't have one but see guys use pellet tubes or maze like SeenRed said.

I have a Humphrey's Down East Beast, an insulated vertical smoker. I tried using about 4 briquettes to cold smoke, but found it much easier just to use the A-Maze-N Pellet Maze Smoker without any charcoal.

I may need to look into one of those mazes in the fall when the temps drop...
