• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Injected Beef Ribs Cook Today!! (Rolling "Live'ish)

Lots of beef ribs going around today. Love it!! Doing some myself along with probably some sausage later. Since I'm sans Shirley till next month I figured I would fire up my WSM which I haven't done in at least a year :clap2:. I had no idea what it would look like under the cover :twitch:.

So here the unveiling. Not too bad actually aside from a little mold and nasty looking grates :biggrin1:



Nothing a little "KILL IT WITH FIRE!!!!" won't fix :clap2::clap2:




After a scrub with foil gave the grates a little oil and foiled the pan and looks good enough for me



Chopping up some smaller sticks to run those instead of chunks


Injection time!! Doing more of a Mexican inspired flare on the injection and rub






Loaded up with a little kingsford/lump combo




My WSM temp gauge is shot and does really even move and since I don't ever really use it this will do well. I might replace it, but probably not soon


Doing a little seasoning and wife helped as she likes to do


Ribs on about 2:15 and just going to let it ride where it wants. It's all wide open


Picked up some good Steel Reserve for something decent to drink and then some crappy Sweet Water as a back up:icon_blush:


Starting with my fav and then into the Sweet Water later after it doesn't matter anymore. Not just going to waste Steel Reserve. It isn't like they make this stuff as easily as bottling water :-D:twitch:.


Here's the fire shortly after they went on. Though the flames kicked up when I opened the door so it didn't look exactly like this


Anyways thanks for looking. I did take some sausage out of the freezer to thaw for later and we'll probably eat all this with a side of Digiorno pizza!

So I posted this video on a thread that Paul (Tuscaloosa Q) started. I've never had good luck with beef rib membranes and pulling them off. They just seem to feather into little shards so I just leave them on. So since he was asking about if people remove them or not and since I was making some today I figured I would film it real quick.

It did not turn out the way I thought it would especially since it is never easy..........:-D

Man, I've never seen someone fumble so much with a membrane. Couldn't you have pulled off more pieces :wink:

I've inject Brisket but I've never found a reason to inject Beef Ribs.

After about 2.5hrs in I wrapped and changed up beers.



Doing a foil butcher paper combo........is this how it works??




Pit temp got hot for about 20mins as I opened the door and let the flames burn some new wood, but now back down to 315.
 
Back to the Reserve. Does it look even better in the pink Smithfield koozy?? I think it does :-D:becky:

Ok sorry for the delay. A combination of guests and "other things" got in the way as they do :loco:. Everything was great. Instead of sides we had pizza which I have to say make a good side to bbq :clap2:. With only 3 bones on the beef ribs and 5 people I just chunked it all up and put a little sauce on it. These were a little more firm than my last go round, but still really good beef flavor. The injection added a little additional twist on flavor.
