• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Identify this venison please!

Got given this frozen piece of venison to cook but first I'd like to know what cut it is. The bag looks like it's a gallon size, and the meat is 1 1/2" thick on one end and goes up to 2 1/2" thick on the other.

Any guesses?

It's hard to tell in the package with the frost on it. We can all agree it's not the tenderloins (lol). I don't see bones so it could be a de-boned ham or shoulder, but that is just a guess as the shape of the muscles are not clearly visible.

I don't see any horns so it must be a doe

LOL..... Too funny Bludawg

As a suggestion (that was suggested to me), I was told to get rid of the fat as this is what gives game meat its gamey flavor. Anyone else hear that?

Yea it's in cubes. I might just fry it up and make a big pot of venison stew.

You might soak it over night and cut it into 1/4 to 3/8 slices or pieces .Then fry it up with some real thick brown gravy with onions.Goes good with biscuits.

Yep it's cubes.... many great suggestions above, keep us posted on the cook.

I don't think that is totally true.

I am allowed to take Bucks or Does with my license due to a disability. I prefer the does as they have much more fat and marbling in the meat giving a more tender meat and an extremely mild flavor. I have never had a doe with a gamey flavor, bucks yes.

Stew baby....venison stew for football Saturday!!! Smoked style though of course. :biggrin1:

Thanks for the info! I hope I'll get to taste the difference one of these days.
