Sunday morning and couldn't go to church because mini me is on quarantine from daycare so bbq meatloaf it is.
Cooked it on the WSM using my billows for the first time. The fan worked excellent and makes running this smoker even more effortless.
Ran Bertha at 275* for 1 hour 45 min. The meatloaf was cooked over cherry and pecan.
Dinner was served with some mashed potatoes, corn niblet, green limas, and biscuit.
I hadn't cooked one of these since around April and it was sooo good. I might be alone but smoked meatloaf is one of the few meats I feel like the pellet grill doesn't quite match up with.
Don't worry Marc there was a meatloaf sandwich for supper, no doubt!

Meatloaf is one of my favorite meals, and when you do it over coals, well, that just takes it up another notch! Great looking winter grub!
 
A smoked meatloaf is one of my most favorite things to make...and eat.

No hijack intended- but leftover meatloaf is not just for sandwiches.

It makes a dandy breakfast hash. My last meat loaf was just not very sliceable - needed to do something with it other than "bowl plus spoon= eat". Googled "meatloaf hash" to see if it was a thing- and it was- a very good thing.

meat loaf hash? Ok- but just because you asked. this is just what I did in a skillet for me and the wife, you can scale it up

1/4 small onion- finely diced
2 Jalapeno deseeded/ deveined - finely diced
2 med potatoes - peeled and finely diced
2 slices of meatloaf - cut into cubes

saute onions and jalapenos in a skillet with 1/8-ish cup of oil.
once the onions are softened, add the potatoes
put some color on them- go about 15-20 minutes
add cubes of meatloaf- go about 5-7 minutes more.

season to taste with salt, pepper, garlic

crack 3 eggs -leaving some space- over the top. cover and cook to your liking (anything except soft fried/ sunny side up is wrong but you do you) -

season eggs

dig in.
