• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Has anyone ever eaten at Bandera? It's a great, small restaurant chain. I know there's one in Tucson and one here in Sacramento. It's my wife's favorite restaurant. (And it has a great name)

They have the most amazing cornbread. I know it has corn and diced chili's in it. I don't believe they are japs, more likely anaheim chilis. It's baked, but has a crust on top that appears to be buttered.

Anyway I need to make some fantastic cornbread this weekend. Want to cook in cast iron skillet in the oven.

Does anyone have a recipe they can share with me. It needs to have some rise to it and be moist.

If you add more egg than called for it should come out with a "Cakier" texture.

It's pretty hard to beat the Jiff mix.

I pretty much always use the Jiffy mix. If you want it to be more like cake add 1 tablespoon sugar for each box. A 10" cast iron skillet will take 2 boxes. Bake it at 425 until it's nicely browned on top.

Not one in Tucson I don't think. Looks to be one in Scottsdale.

So as to the particular of their cornbread, I am not sure. I have had good luck using Jiffy mix, adding a couple spoons of creamed corn and a tad of sugar, and fresh roasted green chiles. Top with cheese when it is almost done. Love cornbread.

There's one in Chicago and I love it. I found a similar recipe on Cooks.com, just by searching "jalapeno cornbread". Of course, I had to jazz it up with hananero sauce for a little extra kick. It was a hit among my spice-friendly group.
 
This looks like it is about what you are looking for. It's from RecipeZaar and I haven't tried it but it looks like a good start.

INDIAN CORNBREAD

1 (8 ounce) box Jiffy corn muffin mix
1 1/2 cups Bisquick baking mix
1 (14 ounce) can creamed corn
1 (8 ounce) jar chunky salsa
2 eggs
1 cup shredded cheddar cheese
1/2 cup diced onions
1/4 cup diced green peppers or jalapenos
1/2 tablespoon sugar
1 teaspoon salt
1 teaspoon black pepper (optional) or cayenne pepper (optional)
1 tablespoon Tabasco sauce (optional)


Preheat Oven to 400° and generously grease a 10 inch Cast Iron Skillet or 12-count Muffin Pan. (if using the Cast Iron Skillet, make sure you place it in the oven and get it hot before you pour in the batter).
Mix all the ingredients and pour batter into prepared pans.
Bake for 35-45 minutes depending on how hot your oven gets.
Cornbread with be super moist so do not over bake it!
If you prefer Crunchy Cornbread, I suggest you bake this using the Muffin Pans.

Bandera is on my list of places to go (it's a looooong list). It's at 535 N. Michigan for those who are curious. Here's a nice write-up.

For those with a Trader Joe's nearby you have to try their cornbread mix. It's the best mix I have tried by far. I have chopped some poblano and added it to the mix and it came out great.
 
I've eaten on Bandera and in Bandera, but never at Bandera. Guess they haven't reached here yet.
