My wife came up to me after church on Sunday and said, "We're going to open a BBQ restaurant. I'm going to manage it and you are going to cook."

She said it just hit her during the sermon. The sermon wasn't even about BBQ.

She said she wasn't sure whether it would be here or in Texas but we will open it within the next 5 years. Now she wants to take restaurant management classes and wants me to take some culinary classes so I know how to operate a commercial kitchen.

Gotta love that woman.

That is one good wife.... now my darling bride, let me trade off her SUV on a 3/4 ton Dodge Cummins - and get a 31' 5th wheel toy hauler - so that we could compete in more contests, and get my daughters more active, too. The 5yr old is mapping out her kids ques right now. She has me going to Madison, IN and Marshalltown, IA for starters :o)

I just love all the women in my house!

I can only imagine the side dishes you come up with. I always wanted to have a place and walk around during dinner with some new stuff and have people try it. I think people would luv that.

Good Luck BigMista.

That would be me too. I love to cook and get appreciation for it. Problem with me is I suck at running a business. I'd go broke in no time, but have a dang good time doing it.

I would love to cook. I just hate bean counting. That would be her job.

Very Cool Bro. Where do you guys go to church? Have you been to any CBBQA events? I am kinda new here.

I went to an event down at Imperial Beach a coupla years ago. I'm doing the contest here in Los Angeles in April though.

I go to church in Manhattan Beach at the Church of the Beach Cities. Kind of a haul for you from Indio. More than welcome though.

Pork butts rule. I love my wife. Back on topic.

I worked in the Restaurant Business for 13 years and I can tell you that I am in no hurry to get back into the "Fray" as JT would put it. It is a hell of alot more complicated today than it once was. Being able to cook good and minding the books is just the tip of the iceberg.

Not to throw a wet blanket on things but here goes---The worst part about the whole thing is the Hired Help!! Restaurant workers are nomadic people. They earn lower wages and either work for very short periods of time or move from job to job depending on who is paying the most at the present time. Hireing and training are a constant task and for a small business owner, very time consuming. Second--Dealing with local and State regulations regarding Health & Safty issues is another concern.

If you still want to JUMP let me know and I will help you open your first of many BBQ Chain Restaurants.

Good Luck!! And you do have a fine Woman who is willing to share your dream!!

opening a business is hard work especially a restaurant. long hours, no money, very stressfull. but if your family is involved and everybody has the drive to succeed then it's the best thing there is. good luck!

Wow! You are one lucky guy. Can your wife talk some sense into my wife. You treat her right now cause you really have a gem.

Well maybe if you move to Texas and open a small joint that has limited hours you could do it. Just got to keep it in the family to reduce the hired help problem. Lots of Tex Mex joints around here are open for lunch only and serve the commercial areas of our town. Then maybe some catering on the side to fill in the empty time slot. It's doable!

I talked to a guy selling Q out of trailer parked in front of a liquor store
in Hill Co. Texas. He said he was doin ok cash money and all. Big Friday afternoons case of beers and a few pounds of Brisket rack of spares
They were busy great Q and sause was an extra took 3 days week off

That's great. I hope you do well, if you try it. Two words of caution, however. Keep in mind, in Texas, Q is like gas stations. They are on every corner. Pick your town and location very carefully. It ain't as easy to stand out from the Q crowd here as in other areas.

Plus, as Thom said, it's not unusual for folks to set up shop in a parking lot. But, unless they are doing it by the book, don't expect to get away with it for long. The health dept will find you sooner or later. And in Texas, you better hope the state comptroller doesn't find you, if you operate without a sales tax permit.

I vote TEXAS. In specific - within 10 miles of my house.

I'll be a customer.

I would imagine Tx labor laws are way easier to deal with than CA's.

Wanna trade wives? You got a keeper there Mista.

I used to buy roadside BBQ from a guy who turned out to be I believe an uncle of one of Meathead Wayne's team mates. It was down at Truman Lake. Apparently this guy worked out of a mobile set up Thursday through Sunday during the months of April through September and made a killing each month, enough to live on for the rest of the year! He ended up selling the rib recipe to some folks who opened a permanent BBQ restaurant across the highway and now they're kicking MAJOR butt and have been for years. Wayne, if you know the facts any different, let me know but that's what I recall Ron telling me at Blue Springs. I'm already planning my retirement income and it includes roadside BBQ in a major recreation area and maybe a little real estate.

Wherever you put it I plan on eating there. May not be too often but...

Mista you are sooooooo lucky. Open the BBQ here in SoCal. You would have no ral competition. The place would be packed once word hits the streets. And if the location is just right, I could swing by for lunch during the week.
