Barbefunkaramaque posted about this a few weeks back and I completely agree after this weekend. First of all I went and picked up a second redicheck maverick remote thermometer. At some point during the cook I got HHH on both of them even though they were in the meat and never go exposed to an abnormal heat. they came back but were acting funny so I said to hell with it and took them out and just went for the bone wiggle technique - Oh I was cooking 34lbs of butts.

The way I see it now is that if I am cooking somethign to pull them they are way beyond the point of having to worry about cooking to get rid of any parasites or other baddies. And on top of that if you can pull the bone out from the side they are definately done.

So for me I agree wholeheartedly now and I am done with meat thermos.
 
Your problem is simple. You don't have a blue thermapen. The blue one is 3 times more accurate and twice as fast as any other color thermapen:laugh:.
 
I like having the remote thermometer, because otherwise I'm too tempted to open the pit and peek.

But, it's just a guide, and not the final judge.

I've had mine whow the HHH (or high) error. Turns out the cord was pinched by the lid. Moved it to a looser point of the lid joint, and it's fine...

I have had the error too, I just cleaned off the probe.. turned both units off then back on and it worked.
 
If it is something you are familiar with, then it isn't a biggie to not use a Thermo imo.. but like it was mentioned it is a nice GUIDE!!
