• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Huge rib cook for Sams Club

Hey guys, thought I'd post some pics from our last big cook of the summer. We cooked ribs for the local Sam's Club contest a few weeks ago. They wanted something like 150 racks of ribs cooked, so we thought it would be a fun challenge. Didn't have a lot of info going into it about what type of rib it would be, but I figured it would be baby backs or st louies. So we made 8 big rib racks in the week leading up to the event out of some stainless rod. Long story short, we got there a little later than we would have liked and when we got the ribs, they were all spares! So we spent a couple of hours trimming and finally got the ribs on around midnight. Caught an hour or so of sleep and turned in a ton of ribs at 10:00 AM the next morning. It was actually a lot of fun and a good challenge.

Do you work for Sams Club? Did they supply you with ribs for free?

These are very important questions.
 
No, neither of us work for Sam's club. We were contracted by a marketing company (on behalf of Smithfield) to cook the ribs. As I learned, there are a lot of moving parts with the bbq tour. Smithfield actually provided the ribs for the event.
 
If you cooked that many racks after being surprised by what you got, you're an honest to goodness BBQ guy!

I like the racks. Especially that you can wrap the whole rack with foil or paper in a big block of ribs.
 
Thanks for comments guys. Just to clarify, when we wrapped the ribs we took them out of the racks. We just wrapped 5 or 6 racks together in a triple layer of foil. The rod was 3/16 stainless, and I felt like that was just about right.

PERFECT....a long while back we were talking about rib racks in offsets. My thought was just like you did it, Have the heat go through the length of the bones. Nice job!
