I used to call my smoker the "meat ruiner", and now I'm considering retrying the smoking thing with an UDS, a pellet grill, or those porcelain japanese doohickeys.
I usually cook on an infrared gasser, but it has recently started to fall apart so I'm considering rebuilding an old genesis or performer for a project.
I can't wait to try cooking my first Moink balls.
