Got two Tri Tips from Cosco , Not sure How long and what Temp I should cook them For ?
 
The length of the cook really depends upon the temp of the WSM and size of the Tri-tips

The last tri-tips I made took under 2 hours to get to 125+.

I used Chicago Steak Seasoning from Penzey's for the rub. The kids LOVED it.

I was doing a couple butts, some baby backs and the tri-tips (one at a time) in my WSM that day.

I had the temps around 275 or so (no water - just two pans for the heat shield).

I don't remember just how large the tri-tip was, but it finished in about 1 3/4 hours, then foiled and most of it eaten outside before we got to the buns.
