• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

How fast can ribs be done?

I'm fully in the low-and-slow, BBQ-is-done-when-it's-done camp. That being said, I have a compressed time window for some friends who are visiting, and was wondering what's the fastest I could get spare ribs done and still maintain tenderness. If we're talking hot and fast, how hot and how fast?
 
I've done several around 400*-500* in 90 minutes lots of times, even using sugary rubs....But there's a but. First the ribs are perfect juicy tender but I didn't grate cook them, they were done in a rotisserie system I'm making and cooked over a open flame.

Lots of people on here cook ribs in the 350* range with great results on cook grates, in that range you could get spares done in 2 to 2.5 hours.
 
I've done loinbacks in under 2 1/2 hours at 300. Acceptable, but not as good as my normal 4 1/4 hour ribs at 235. Not enough of the fat rendered.
 
My standard is 3.5 4 hrs.

Ive pushed them to 2.5 or under

Everyone should try 99 minute roto ribs

I consistently cook tender loin backs at 275-285 in 2-1/2 to 3 hours. Spares in 3-1/2 hours.
 
Old Dave how is that Orion cooker? I saw it as BassProp and thought it looked pretty interesting.

Fastest I've ever done spares is 3.5 hrs

I had one. It does a good job, you won't get much smoke flavor though, but it is quick. You will also spend a lot of $$ on charcoal.
 
If you go over 300°F you can go 3 hours. Or maybe a hair longer. (for backs)
 
On my i-Cube and Toolbox, just under 2 hours at 275-285, no wrap. Cook for an hour 45 and sauce for the last 15 minutes.

If I crank it down to 250, it is closer to 3 hours.

The past couple weekends I've done spares on a rotissirie in about 2.5 hours (salt & pepper, basted with bacon grease - yum!). I didn't really set out to cook 'em so fast, but I made no effort to control heat or anything like that - I just kinda let the chips fall where they may. Anyway, I gotta say they were pretty dang good - definitely tender and all that. I think I will slow it down a little moving forward 'cause there was a little bit of unrendered fat.

It does a pretty good job on some cooks but it is not very safe around children or pets. I get plenty of smoke flavor on my meat but it does take about 2-3 cups of shredded smoke wood on each cook. And if you have to use the fire charged charcoal, it can get expensive for each cook. However, standard charcoal can be used with some fire gel and will get you the same results at much less cost.

Overall, it is ok but I don't think I would purchase it again.
 
What are you cooking on? Anything with radiant heat will cook much faster even without direct heat. 275 for about 3 hours in my pellet grill will give me perfect ribs. Sometimes it's closer to 4 on my other cookers at the exact same temp. The hot drip pan really speeds up the cook time.
 
You can direct coal spares in 3 easy. 2 to 2.5 if you go hot.

It's not quite the same as slow smoked, but damn tasty. Leave the membrane on for an extra layer of protection if you do this.

BTW--I think Dreamland does something like this for ribs--really hot.
 
Go with baby backs. Less fat to render and can be pretty much perfect in 3 hours.

Get some beer and make a night of it.
