I hope you all had as a great holiday as I had. All the family got together, all were healthy except for the cold the grandkids gave me for Christmas.
I have not fired up the EDS for a while and was itching.
Sun. night I took some time to make a couple loaves of braided French bread for Tues. nights Rib roast.

Next up was Cristmas eve at my sons house. I offered to make up some chicken arms.


And saw Paula Dean make somethin called Sawsage Bowls. Looked fairly simple and tasty. So thought I'd give'em a shot.
Nothin but Bisquick,sausage, and cheese. They were pretty dry. I would make 'em again but will have to fiddle with it first.



Then dinner with the sweetie Christmas night as we are all alone now was going to be standing rib roast.

What a chunk of meat eh? Went to high school with the butcher.

Nothing fancy just a liberall rub of EVOO, Kosher salt, Cracked black pepper, and some minced garlic. Threw it on the EDS at 2:30pm at a temp of 275* and forgot about it till five. I didn't really forget about it I was watching all the action on the Maverick ET7 Santa brought. What a cool tool I sat on the couch and watched the EDS run up to 310* went out and put in a plug and watched it drop back to 270* and watched the meat temp rise on up to 130* and wrapped and put in the cooler around 5pm while the fingerling potatoes au gratin with Pecorino Ramano cheese finished in the oven.

Sat down to eat at dusk with a bottle of bubbley.

And followed up with a nice lava cake.

All in all everthing was just as I wanted it, which for me is a pretty tall order.
Also my sweetie made good on her promise of a new Red Thermo Pen. I'm gonna really love using that!!
