• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Well, I suck at introductions but here I am. My name is Jeff but many call me Jeffro or just Fro. I've been using the name "trouser chili" online since 1995. I'm 26, married and have a little boy and a dog. We all live in a little ranch in the suburbs of St. Louis, specifically Shrewsbury, Missouri. I enjoy motorcycling, Formula 1 racing, SCCA racing, autocross and of course cooking, especially BBQ. I am a network engineer specializing in routing and network security by trade and have spent many a year literally building the internet.

I used to do all my BBQ on an ancient and rickety old 22.5 inch Webber Kettle that I inherited from my father. He had it since I was little kid and I suspect it was well over 20 years old when it died the other month. I could smoke up some mean ribs in it using the offset coals technique and I've yet to find a person that didn't like the result. But the bottom finally fell out of it during a cook and I nearly lost 5 slabs of ribs. To replace my loss I've recently picked up a New Braunfels Bandera, one of the last at my local Home Depot. They are now stocking all Char-Broil units. I had to rob the other remaining unit of parts to make mine complete. But I got some extra grates, a nice 4-inch temp gauge and a 10% discount for my trouble. Wheels fell off it in the parking lot. Karma I guess. I've made one good and one wonderful pork butt in it so far, and ruined two slabs of ribs. I chocked those up to a learning process and cut my losses. The dogs appreciated my mistake far more than I. I also have a newer 18.5 inch Webber Kettle that I use for grilling beef only and a Weber Smoky Mountain that I never use.

I'm looking forward to learning more about my Bandera, and have already read the Bandera 101. I've put in a new fire grate and a baffle made from aluminum flashing. The flashing already sags badly though, so I'm looking for a better solution. Cooking became much easier with the addition of both, and I made my wonderful pork butt with both in place. I also ruined two slabs of ribs with both in place. I wasn't thinking and didn't realize the temps would be much hotter below the pan with the pork butt in it. Oh well. I'm going to attempt a brisket next, but want to smoke it with oak and thus far haven't found any. Currently I'm buying wood from grocery stores. I need to find a cheaper source.

Welcome Jeff.

And I'm sure plenty of the MOFO chapter will let you in on their wood sources. There's like 20 of you know.

Glad you found us!

Welcome TC!

You definitely found the right group. Keep a sense of humor and you will learn a lot here and have a great time!

I hear a sigh of releif. Welcome to the group. I thought Al Gore invented the internet ?

Al Gore claimed that. But the real man behind the Internet is named Vinton G. Cerf

Welcome! Are we challenging the Texas boys for most members now? :D

Welcome TC,
Glad you chose to become a part of our family.
There are folks from all over and from all walks in this bunch,
and that's part of the fun as well as our mutual addiction for
Q. I hope you have a sense of humor, because these guys
will say just about anything, but all in fun. If you have a
question most likely someone has an answer or an idea that will
help.
Welcome aboard!

Welcome Jeff!

You are a brave individual to use your screen name on this forum! :D

Around here TrouserChili would more likely be the load in Bill's drawers after a bucket of jalapeno peanuts followed by a blue pill -- serious hand check time!!

Anyway, glad you've decide to join us!

Welcome. What exactly is the meaning behind the name trouser chili?

And we invented the internet here in Illinois.

Am I the youngest now?

Oh and as far as having a sense of humor; well, what does a name like trouser chili tell you? I guess you could say I'm a pretty crude, crass kind of guy at heart. I'm not easily offended unless your riding my ass or otherwise threatening me on my bike. I like to drink beer, but I clean up well and can appreciate a fine wine as well. Chock that up to my years working for an upscale catering company. We're talking white glove and tux kind of affairs. I also have quite a bit of experience in security, towing, recovery, repo and general wrecker operation, automotive repair, and wilderness survival.

Trouser chili is usually a brown chili but green and yellow is not uncommon, sometimes it contains beans, sometimes corn. Sometimes it’s greasy, hot and so spicy it’ll make you pucker right up. It comes in many different consistencies and textures, no two batches are exactly alike.

Oh yeah, you don't want to eat it. Well, let's hope not at least.

Is that why we "Cerf" the Internet now?

That was terrible even for me.

Actually we are few in numbers but extremely high in Quality.

Bill you never told us you had a brother in Missouri!

Welcome Brother (and fellow MOFO) Jeffro, sounds like you'll fit right in!

I got to ask. You been working on the internet since you where five ?

Does "many a year" mean 21 years or something? I've been doing the IT game since 1997. I did get my first computer at age 6 though. A $5,000 (1984 dollars) Macintosh 128K. What a machine it was! Still have it today, but it's painfully slow comparitivly. Still, I miss the days when an entire operating system complete with a graphical user interface could fit on one single-sided single-density floppy disk.

Hey TC.. I'd like to say Hi and welcome.. but it seems everyone did that allready..... so anyway...

Hi and Welcome..

Whats the Internet?

Jeff:

Let me know if you need some cured wood for your Bandera. Assuming you're willing to drive out to St. Peters.

Sure, I'd love some cured wood. What's cured wood? I can drive anywhere.
