I am new to the forum and I really like it so far. Smokey Fingers BBQ is a new biz that I am starting in memphis. I look foward to meeting other BBQ brothers in my area. I just purchased a trailer (used previously by another memphis team, I think) It is 22 feet with a 400 gallon drum with fb,griddle,deep fryer and sink setup. I plan to do concession and catering although the trailer was setup for competition. I have a good deal of work ahead in making the needed changes. anyway...I love BBQ hickory smoked and seasoned well so you don't notice that there's no sauce \\
I do believe that sauce can compliment meat but, i would rather taste great meat alone .....Like a well prepared steak..
