I'm a long time Weber Kettle griller. I've also done some low and slow smoking on the kettle and have always wanted an offset smoker. I saw the Brinkmann Smoke King Deluxe at the local Menards. Two weeks later my wife and kids got it for me for my birthday
That was last weekend. I spent 2-3 hours putting it together and didn't have time to do anything else, other than some limited googling, until yesterday. Got a fresh bag of Kingsford, some lump charcoal, hickory chips and a few sticks of oak. I planned to do the curing and then grill achicken and smoke a turkey breast and a few sausages. Well, I got a late start, about noon. To make a long story short the turkey breast came out of the smoker around 4:15 AM, whew. During the course of this adventure I had trouble maintaining temp, it drizzled, the wind changed direction and velocity. Bottom line though, everything turned out GREAT! I did take some time yesterday reading online info. It looks like you guys have a pretty good group here and I look forward to learning from a getting to know a bunch of you.
