I have a 10lb prime brisket i didn't have enough time to make for the 4th since i ran out of room with a 15lb prime brisket and two pork butts. I am thinking of either making it or refreezing it.

Just made Italian sausage. 2/3 oph the kids are at grandmas. Thinking steak tomorrow. May do some griddling’ phor breakphast. Maybe make a salsa. Next weekend I’m going to do a phajita extravaganza (homemade everything)…so planning that out.

Trimmed up a brisket I had wet aging in the meatbeer fridge for about 37 days. So I’ll probably throw this on the drum at some point….then grind some beef and render tallow from the hard fat.

Hi All! Been a while. Yesterday I did a chuck to make a chopped beef Sammy.

Toasted Kaiser some mayo pickles and Stubbs original. It came out great!
