Let's see, I was born in a log cabin… no not really but a lot of people think that all of us from Illinois were….
I’ve been smoking/grilling for about 10 years now…. First attempt was ribs that didn’t turn out the way I felt they should and I was hooked on perfecting both them and any thing else I put next to (or over) an open flame ever since.
I am currently the ‘Pit Master’ for a catering team that serves over 35 NASCAR race teams. While I only do 5 to 8 races a year, I’m expected to prepare between 8 and 12 full briskets to each race I attend. All of this done on a single ‘Brinkman Smoke ‘n Pit Pro’. I’ve been thinking of either purchasing or building a larger unit for about a year now.
While I do enjoy the races, I am thinking of trying a couple of competitions to both see where I can improve and more importantly meet some of my fellow brethren.
So Divemaster, Is your name just a tese or do you dive, too?
Besides Q, gettin wet is my favorite past time, just don't get to do it much.

Dude, you're killing yourself. Buy a bigger smoker. A Spicewine or a Klose BYC would be my reccomendation. And by the way, welcome to the site.![]()
Tell me about it… I am actually looking at the Lang 60… The good news is that the race season is almost over so I can concentrate on more important things…. Like smoking up the neighborhood….. lol :twisted:
