• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Didn't have much time today so I turned my WSM into a grill :eek::eek: for a quick Salmon meal for dinner:

In Florida right now, lots of houses for sale. I got one in downtown Orlando you can have for $300 K, I will include a charcoal grill and come cook you grilled fish,:mrgreen:
 
i have grilled fish before but have never tried to smoke any. Was thinking of trying to smoke some salmon and was wondering if anyone had any good ides about what wood to use. I looked in the bandera 101 wood list but only saw ash. Does anyone have experience with this?

i have smoked with mostly fruit and a little hickory thrown in and it came out good.

I think like our oranges...they ship all the fresh stuff to Texas or somewhere:biggrin: ....actually my daughter likes salmon so i try to make it for her every once in a while. I prefer grouper or pompano.

Alder is traditional on the west coast. Of course alder is the most abundant "hardwood" here. A bit of cedar smoke makes it good- like when you plank the fish and the plank starts to char!

If the rain stops, I might do this tonight!
 
nuts! forgot I ran out of alder! really need to get down to the in-laws and cut up a tree.

In my opinion, salmon is sturdy enough to stand up to almost any smoke wood. I regularly use pecan, oak, even hickory. Any fruit wood is good. I use citrus sometimes, too, but I prefer the more assertive woods myself.

If I had to pick one, it would be pecan.
